Clarkes Gully has become my favorite NY waterfall walk. There's no trail, just a small stream to explore as it cuts through the rock north east of Naples. The Gully is a delightful place to get your feet wet.
There's an upper section to explore which is a longer experience, or a short walk into the lower falls. Next time I visit I plan to start at the top and make my way all the way down. This may require a little bit rappelling (abseiling) which would be a blast down some of the falls in warmer conditions.
