Test run of drying my own meat

The biggest problem when hiking is to keep food weight down. Dried meat is a good way to do this and my South African friend put me on to a dried meat called 'Biltong'. It's delicious, the big problem being that it costs over $60/kg. The easy answer is to make my own. This is my first go and if it works I'll explain the process. If it doesn't I'll have more time to blog as I'll be sick!!
